Ingredients :

Basmati Rice – 2 cups,Mixed vegetables (carrot, peas, potato , beans and cauliflower) – 500 grms,Tomato – 2 medium sized,Ginger Garlic Paste – 1tea spoon,Green cardamom – 5 pieces,Bay Leaves – 3 leaves,Cloves – 5 buds,Green chilli (split) – 5 pieces,Cumin powder – 1 tea spoon,Fried Onions – 1 onion slices,Oil – 3 table spoons,Water – 4 cups,Salt – to taste,Chopped coriander leaves for garnishing – 2 table spoons,Garam Masala – a pinch for garnishing.

Preparation method :

Wash and soak the Basmati rice in water for a few minutes.Peel and cut vegetables into small cubes, cauliflower can be cut to small buds.Blanch tomato to de-skin and then cut into small pieces.Heat oil in a sauce pan, add cumin seeds and let it crackle, till  it gives a pleasant cumin flavor.Add the Ginger Garlic paste, chilies, mixed vegetables and sauté well.Add the rice and stir gently for a few minutes without breaking the rice grains.Add water and close the lid of the cooker.Add water, tomatoes and salt to taste.Cover the sauce pan with a tight fitting lid, allow to cook in very slow flame for approximately 20 minutes.Open lid to check if the rice is cooked. Close fire once the rice is cooked, sprinkle Garam Masala.Garnish the Pulao with fried onions and chopped coriander leaves.Serve with a bowl of yoghurt or Raita
